Back when Mexican food was “foreign” and “exotic” and burritos were weird, cookbooks like this were everywhere. Marvel at how putting salsa on eggs is STTRRAAAANNGGGEE and different. Cringe at the racial stereotypes. Scratch your head at the geographic impossibility of including the Spanish omelet in this collection. Wonder at the merging of cuisines by making Mexican pizza! Pat yourself on the back for making authentic enchiladas just by opening a can!

I especially love that the cover girl looks like Loretta Lynn ;)
